A classic roasting joint from the hindquarters, getting its name from the silvery sheen that covers the meat. 

 

This joint can be cooked fast as long as it's enjoyed rare, if you want it any way other than pink we recommend cooking long and slow with plenty of liquids to tenderise the meat, keeping it succulent and juicy.
