The brisket is one of the nine primal cuts. There are two briskets on each animal.  They come from the breast or lower chest of the animal and are located just below the chuck (shoulder). These muscles are used a lot and carry a great deal of the animal’s weight, making them tough but packed with flavour.

Briskets have a lot of connective tissue so the correct cooking method is required to make them tender. Low and slow is the best way to handle a brisket, with our favourite being cooked all day in a smoker, creating a beautiful pulled beef that will please the whole family!
