Our lambs live outdoors, grazing diverse herbal leys and permanent pasture, growing at a natural pace without concentrates. This slow, grass-based system produces meat with real depth of flavour, excellent texture, and a natural richness that shines when cooked low and slow.

 

Lamb shank is a working cut, full of connective tissue and marrow-rich bone. Given time, it transforms into something exceptional: deeply savoury, gelatinous, and meltingly tender. This is comfort food at its best.

 

Perfect for braising, slow roasting, or long, gentle cooking in stock or wine, the meat pulls effortlessly from the bone and delivers a rich, restaurant-quality result with very little effort.
