Our grass-fed beef tongue is slow-grown, richly flavoured and wonderfully tender when cooked properly. Raised on pasture on our Somerset farm, the tongue develops a deep, beefy taste and a fine-grained texture that’s closer to slow-cooked brisket than offal.
After gentle cooking and peeling, the meat becomes meltingly soft, making it one of the most luxurious cuts on the animal. It’s prized across many food cultures for good reason — economical, full of flavour, and incredibly versatile.

Simmer gently until tender, peel while warm, then use as you wish — slice thick for frying, shred for tacos, or serve simply with mustard and greens. Tongue improves with time and reheats beautifully.
