Our grass-fed ox heart is lean, deeply flavoured and surprisingly versatile. Raised slowly on pasture on our Somerset farm, the heart develops a firm, steak-like texture and a rich, clean beef flavour that sits somewhere between a slow-cook cut and a grilling steak.
Properly prepared, ox heart is robust but not heavy, making it ideal for slicing and quick cooking, slow braising, or long marinades. It’s a favourite in kitchens that value flavour over fashion, and a brilliant introduction to nose-to-tail eating.
